Beef Back Ribs
So I've been avoiding low temp cooks on the Akorn ever since it decided to take flight down the steps. I decided to try and bend here and there and maybe, just ( maybe ) tighten up the lid seal enough to not chase temps all day.
So far, an hour in and were drifting between 240 and 260 so I really can't complain too much from what I have to work with.
Decided to throw the second rack on the Electric Tabletop Smoker/Roaster just in case the ones on the Akorn get out of control...
Akorn rack had Silverskin deep sixed and then a light coat of Olive Oil.
Then I mixed up a rub of S&P, Chili Pepper, Onion Salt, Paprika, Cane Sugar, Dried Cane Molasses and Brown Sugar and applied it on the heavy side.
Smoking over Lump, Pecan, Apple and Hickory Chunks. Plan was to use the last of our Sucklebusters Pecan BBQ Sauce until I saw the cap was on crooked and it thickened up and just didn't look or smell right .So, ill have to get another order in of that and the Original Honey.
So, I had to hit the local Shop Rite and find something to try. Found some Rufus Teague Whiskey Maple I'm gonna try so we will see.
Electric Smoked Ribs got Olive Oil and a similar Rub mix and Smoked with Apple and Mesquite Chips under a water pan filled with Apple Juice, Apple Bourbon Whiskey and Fireball Cinnamon Whiskey.
Looking at maybe the 2,2,1 for both racks with the occasional Apple Juice Spritz.
Probably Sauce the last 45 minutes at a little higher temp, well see how they look in a few hours.
Hopefully they'll be done by 3:30 cuz were taking the little guy to his very first big screen movie .

Thanks ladies and gents !
Got lucky holding the temps with a beat up Akorn, it lived another day . The electric one came thru as well, surprised me how much flavor the small chips put out.

First time that I "remember" seeing Beef Bones done with the Sweet Theme in mind. Most of the time you see that with Pork but not Beef. Are you glad you used that sweet glazing and would you do it again
