Ok, first shot at beef ribs. Yesterday'd cook was successful. About 5.5 hours(ish) cook them rest 1 hour (Ish) no wrap.
B&B oak briquettes then straight pecan wood. Seasoned like Franklin said slather hot sauce salt and pepper. Not enuff salt or heat for us, will tinker next time.
While the rig was going threw a chicken on for today.

Question - when you said “not enuff” were you talking about the seasoning? The reason I ask is I’ve done them with the Franklin method and they were good. But I How them HARD with S&P. If you are looking for more I’d recommend Sucklebusters SPG (adds a little garlic) or Meat Church Holy Cow. Done both on beef ribs with great success.
Have not tried 1836 on Beef Ribs but I’d bet they’d be fantastic.
