mini meatloaf lunch
a couple of weeks ago i did one of my small batches of mini meatloafs
beef & pork
formed in a bowl and wrapped with a piece of bacon
we cooked two of them then, & i froze the other two
i got one out of the freezer this morning for my lunch
w/ skin on new potatoes - mashed
the sauce was bbq sauce & marinara
bbq roasted direct @8"on 1/3 chimney of coals with hickory in the OldSmokey

Looks great Capt !
It seems as tho I was on a Constant diet of Meatloaf growing up as a kid and as I got older I couldn't even bear to look at one but these look really good and not oozing with Ketchup like alot of recipes do.
I bet that sauce goes great mixed with those taters

Haven't made much meatloaf. The traditional way here is in a "bread form" (I don't know if this is the English word) and in the oven.
The way you made them looks much more tempting and way better looking. This I will try. Well done.

you are correct Joe...
the wife uses bread to mix into the ground beef, I use crackers, she uses the oven I use the smoker, she uses a pan, I use frog matts she uses ketchup, I use bbq sauce, so there is variation to everything we do...

actually the true recipe calls for bread and milk mixed into a "panade"
it's to make the meatloaf less dense = works
the traditional cooking method is in a bread loaf pan in the oven
but the meatloaf sits in it's own rendered fat
I like it a whole lot better smoke roasted on the frogmat on the grill
it lets all the fat drip out
and i really like doing the individual bacon wrapped servings
i can cook the ones i need and freeze the other servings for later
the other day i made four minis and ate two the first meal
and then one for lunch - above
and still have one in the freezer for a future lunch
and there aren't any leftovers.....

Yeah. That's what I liked with the way you did it. That meatloaf in a bread loaf pan doesn't tempt me. It's something with the consistency they get in the pan. Just like you are saying.
