Blackened Ham Steaks

Blackened Ham Steaks
Found some time to fire up the Smokey Joe tonight for some Blackened Ham Steaks. Shop Rite had Bone In for 45 Cents a lb so we picked up a 15 lber and had the butcher cut us up 3 Steaks about 3/4" thick. Made up a paste of a Dark Brown Sugar, Cayenne, Ground Black Pepper, Chili Pepper, Oregano, Parsley, Molasses, and Melted Butter.
Scored the Steaks like I always do and put the paste on them and then directly over the hot Lump for 5 minutes a side.
Layed the Steaks on foil and crumbled More Brown Sugar and Melted Butter and wrapped tightly and back over the Lump but higher up for 10 minutes.
Looks like the wifey is hooked on these, wow were they GOOD !!

We used to kill small Sows and cut the backstraps out. We'd soak in Italian Dressing for a few hours. Prior to the afternoon hunt, we'd fire up an old offset that was on the ranch and get a nice bed of Mesquite coals going. We'd get out the tenderloins and sprinkle with Lowry's Seasoned salt and then cover them TOTALLY with crushed pineapple. Shut the lids at 3 and when you got back after dark the fire was out but still warm; Pork Heaven. I'm going to buy a Ham and try it your way, thanks

That looks fantastic. Great pictures too. Never done the steak that way, but will try it next time. I liked the way you scored them. We only score the skin on the side to stop them from crumbling. And that seasoning sounds great.
We don't use molasses here. Googled it and on the Norwegian wikipedia it says:
"Molasses is mostly used for binder in animal food e.g. horse food or for producing liquor like rum or vodka"
This must be what we call Flintsteak here. (From Fred Flintstone I believe). Very popular in the summer. They also sell them already marinated but they are awful.

Usually just toss mine on the Blackstone and serve some eggs on them BUT you took ham steak to a whole new level. Looks outstanding

That looked amazing. I’ve never considered buying and having them cut it. I’m stealing that idea and love a good looking blackened piece of meat. You got that one down pat. Nicely done.
