Culottesteak

I have a piece of meat we call culottesteak. Se red marking in the picture below for an explanation of where the cut comes from. I don't know what it's called in the US but maybe the picture tells you.

I've read it can be a bit tough. Have never made it before. Are there anybody here that have any experience with this cut?

I'm thinking low and slow. The weight is 1.7 kg or 3.7 lbs? Thinking maybe 275 but for how long and at which temp to pull?


I'm planning to cook this on Saturday if temp rises. -7.8 F outside now.

Any suggestions are appreciated.

It looks like a sirloin cap to me. I have seen some people try and sell them as steaks but they can be pretty tough. I have never BBQ'd one before, we have used them as stew meat in our house. Might dry out a little since it doesn't have a lot of interior fat, just the cap for main source of fat. Maybe someone on here has experience BBQing them.

Thanks for you reply. Might be what you on the US call a top sirloin cap. Makes sense to me.

I googled a bit before I started the thread and what I found about culotte was different opinions. Som said it was tough other say it's great when cooked to medium.

Top sirloin cap= Picanha!! And very true, this is not a cut you cook anywhere past medium unless you cook it like a roast or stew. Medium rare is perfect!

Ok. Thanks. Medium-rare is the way I like my steak so that is good.

oup: chili is great and fitting here now, however I think at the moment it's even more appropriate in your northern states. Heard it's very cold there now.

I will try to put this on the grill, searing it hot and fast, then indirect until internal temp is 132. Then rest. Maybe chimichurri sauce and oven baked potato boats and sauteed onions or coleslaw as sides.


One question: is cilantro the same as coriander?

Yes, coriander is called cilantro in The States. We actually call the seeds of cilantro coriander.

I always thought that Coriander was the actual Plant and that Cilantro was the Spanish name for their Cilantro Leaves :dont: :scratch:

So cilantro is the leaves and coriander is the seeds from the same plant?
