lots of folks like to just rub their butt.. I like to cut 1/4 to 1/2 inch deep x's in them which seems to hold more seasoning seems to get better flavor through and through..

Well its been on for 8 hours now. I didn't wrap it. I also have not mopped it either. I am cooking it fat side up and it has been rendering fat real good. The color is getting darker now. I have used nothing but lump charcoal.

Last time I checked temperature it was at 175. I hope it gets tender. Im starting to doubt not wrapping it. Im also thinking about flipping it to fat side down for the rest of the cook and start mopping it.

not wrapping will give you more bark or crust, I cook till the bone wiggles freely or the temp hits 205 internal, I have found the wrapping makes for a more moist end product though, I cook at 250 in the smoker or wrapped and in the oven

I never wrap my butt and they come out mightyfine. Patience grasshopper . Like spacetrucker said - it’s done when you wiggle the bone and it comes out clean.

Slight setback. I let the temp drop. Got caught up and the fire just about went completely out. Temps coming back up now. Maybe it went hurt anything.

Cowboy lump isn’t the best out there.
If you can find B&B lump, buy it! It puts off a light smoke that others wont.
I’ve used B&B only and have had produced a good bark.

I agree that cowboy sucks. I used b and b on the Brisket a week or so ago and still had some left. I just put the last of the charcoal in. I hope the butt gets tender soon. I do have some kingsford left.

Give got to be in the stall now. Temps haven't moved. Still in 170s. I know that temp drop hurt me. It will bounce back though.
