From the bounty today, it was a long day considering I only slaughtered 2 medium sized pigs, granted, it was a solo operation. I'm not old, per se, but I'm definitely feeling my age right now. Lol!
Anyhow, cut some pork chops from the loin. They were absolutely excellent!
Chops cut, seasoned, and on the grill!
Aaaannnd they're done!!
Very tender considering they were just having breakfast 8 hours ago themselves.

if ya did two hogs, I feel for ya. I'm not that energetic any more. It almost takes more energy than I can muster up to cook anything anymore, much less butcher the meat. Good for you!!

Thanks all! I finally finished processing today. Had all my bits and pieces in a tub full of ice water. I don't think it needs to be said; the wife was NOT impressed with that. However, I cleaned up thoroughly and we have 2 freezers filled with pork. The pork chops were wonderful and om cooking a shoulder roast right now for lunch tomorrow. Dinner will be a family tradition of some Mexican food; enchiladas, chips and salsa, rice, beans, etc.
