Great, I already have it off, rested and in the freezer and will vac seal later on. I screwed up though maybe, went to take a nap, and when I went back out, it was already past my target temp...was not expecting that so soon. :shock: Bad thing is, I didn't even sleep :(

Butt is only at 161 right now.

Let us know how that tri tip come out for ya James.

I think that is down right unamerican!

I am using rib eyes, onions, provolone cheese and some sort of fancy smancy hoagie rolls.

would use some bell peppers and mushrooms, but I aint got any.

Well I watched make em on TV and they was using Cheese Whiz. Provolone is something Eyetalians eat I think. Philadelphia is mostly drunk Irishmen seems like.

We cooked up a mess of food this weekend!!!

2 briskets
3 chickens
4 racks of spares
1 pork butt
1 feral hog ham
2 fatties

The food was goooooood!!! ;)
