Great, I already have it off, rested and in the freezer and will vac seal later on. I screwed up though maybe, went to take a nap, and when I went back out, it was already past my target temp...was not expecting that so soon. Bad thing is, I didn't even sleep

I am using rib eyes, onions, provolone cheese and some sort of fancy smancy hoagie rolls.
would use some bell peppers and mushrooms, but I aint got any.
