We usually make something extra on Saturday's so today it was lamb.
Made a couple of lambracks today. It's lamb season here. Seasoned them with olive oil, thyme, garlic and black pepper. The racks spent about 15 minutes on the grill, then resting 10-15 min.. Forgot to take photo. Made what I call potatopancetta. That is because the recipe says pancetta but pancetta is hard to get here so I use bacon. The potatoes takes about 1 hour 30 min on the grill with the grill set to ca. 320. Rest for 30 minutes.Served with redwinesauce and fresh spinach with vinaigrette. A good red in the glass completes it.
