With just above 20 Fahrenheit when I woke up today I needed a little bit of motivation before firing up the grill. Winter and snow is coming closer :-)
With inspiration from boneless chicken thighs recipes posted in this forum I made my first today. Removed bones from som thighs. Put on a little mustard and some pickled gherkins. Rolled together and wrapped in a strip of bacon and sprinkled on some spices.
Smoked a little with a combination of applewood and aquavit marinated oak. Finished with sweet baby Ray's as glaze.
Served with rice, mushrooms and my favorite broccoli recipe and chipotle chilli mayo. A NA beer beside is always appropriate.
This made my wife and kids happy so let's call it mission completed.

Those look fantastic. I have never thought of using pickles. I'm going to give it a try.
