Been a while since I posted any pic's so here it goes. Picked up some thick cut boneless center cut pork chop's yesterday morning but wasn't sure when I was going to cook them but I went ahead and stuffed them with DJ's Boudin, seasoned with Bolner's Pork Rub and then vacuum packed them. Yesterday evening I decided to put them on the Old Smokey, grilled/smoked with hickory, mesquite, B&B Charcoal and I kept them basted with Stubb's Pork Marinade for a little over an hour at 250 degree's.

Yikes I still say you live on the wrong side of the Sabine
Them roasted Ritz are the BEST
Even tho I've been planning on stuffing some pork chops probably later this week or next week, now I can blame it on you.

I lived in Cajun Country Louisiana for a little over a year as a teenager and I fell in love with the people and the food.
I really miss real boudin.
Plate looks great, Williep!

Try using it as a stuffing in chicken breast also.
