Stuffed Chop's

Been a while since I posted any pic's so here it goes. Picked up some thick cut boneless center cut pork chop's yesterday morning but wasn't sure when I was going to cook them but I went ahead and stuffed them with DJ's Boudin, seasoned with Bolner's Pork Rub and then vacuum packed them. Yesterday evening I decided to put them on the Old Smokey, grilled/smoked with hickory, mesquite, B&B Charcoal and I kept them basted with Stubb's Pork Marinade for a little over an hour at 250 degree's.

Them roasted Ritz are the BEST :tup:

Even tho I've been planning on stuffing some pork chops probably later this week or next week, now I can blame it on you. :salut:

I lived in Cajun Country Louisiana for a little over a year as a teenager and I fell in love with the people and the food.

I really miss real boudin.
