Asiago Caesar and Ranch Weber Thighs

Postby woodenvisions » Tue Sep 04, 2018 9:05 pm

So I've been wanting to try my Work Christmas Raffle Prize out from 2 years ago. I won the Weber Smokey Joe, the small one.
I didn't realize it was the Gold colored one til I just opened it. I'm pretty surprised on how well its made but I must admit I was like a fish out of water tonight trying to figure out the vent settings.
All I have is lump so I hit Bing and Ask.Com and read that it was ok to use lump so I lit it up.

Grabbed some Boneless Thighs, Roma Maters, Fresh Sage, a Yeller Onion, Fresh Italian Parsley and Chopped away.
Recipe called for Ranch Dressing but the wifey is on the fence about Most Ranch so I doubled the recipe and did another batch with Asiago Caesar for a back up.
Also did some giant Asparagus over Popeys Girlfriend on the Cast Iron with just S & P and fresh Crushed Garlic.

Sauteed the Onions and Maters, then added the chopped Sage and added the Dressing, Ranch first cuz I screwed up and meant to do the Asiago in the first batch but all went well so no biggy..
Layed the mixture on top of the Thighs and over the Lump it went.
At this point, the aroma was killing me it smelled soooo good.
Did about 12 minutes, flipped the Thighs and added more of the mixture on top and cooked another 10-12.
I already knew this would be the case, but the Star Of The Show was without a doubt the Parmigiano Reggiano on top for a quick melt.
The Caeser batch got the Italian Parsley treatment rather heavily because we both LOVE fresh Parsley.
The wifey Absolutely Loved the Ranch batch, so much she's already talking about making a massive batch and vacuum packing and freezing them so that's on the horizon.
I have to be honest, its probably the most flavorful type of Chicken I've Ever had, it was Delicious !

Hope u all like the pics :)

Very nice lookin' meal, Wooden. :D  :chef:

I personally probably would have passed on the ranch part on top of the chicken. I'm falling more and more into the camp of simple, clean flavors though and that chicken looked REAL good with just the bird and then the cheese. Still looked good with the sauce too.

Thx rms,

Its funny you say that because for months I've been looking at this recipe and then saying...nah, not sure if ill like the Ranch on top...
And what's even funnier was my wife said I hope the Ranch is not " in ur face " flavor in this recipe. It was a 50/50 shot, but after the first bite she said,Wow, its very subtle and the amount of flavor that the Onions and Maters add all together with the sauce is amazing.
To be real, it was a hint of a citrus flavor somehow.
It was total opposite of what we both expected and she even said she was willing to have that dish 3 times a week..

Either way tho I do understand the " simple " flavor profile as well with the grilled thighs.

U just need to adapt to IT, not the other way around.

Hey there Chris"

Thx man, and I haven't either.
I opened the box and was like ..." Huh "....

Any " gift " from work on Christmas is good, but I think I made out better than the rest lol.

Can't believe it took me almost 2 years tho to open it.

Chicken looks good. Those little Weber’s are pretty cool too. There’s a mod you can do using a tamale pot with the bottom cut out that turns them into a mini WSM. :)

I don't know about perfection but it was pretty good for sure. Plates were cleaner than when they were new :)
