Well now with a cut away that is a lot of fat content. I read your brisket post and thought I've been in the same boat a couple times. But I could trim a little fat off the edges, heat it through and build a sweet BLT.

I too read your brisket post and thought you were talking about the Fat Cap. That is just and extremely fat marbled point. Although not healthy I'll bet cooked down and smoked right that would make some off the charts Burnt Ends

I expect the fat cap to be there, LOL. The only thing too offputting about the fat cap on this one was that portions of it were that nasty kind of stingy silver skin laden fat you see on cheap corned beef.
Fat is flavor, and a completely fat free piece of beef tastes like cardboard. Still, this was supposed to be Prime, and we paid $4 a pound for an 18 pound brisket that was probably 70% fat. Feeling a bit ripped off at this point.
