Lone Star Lunch

Beef Filet wrapped in Jalapeno Bacon, Roasted Brussel Sprouts and Twice Baked Tater was the Menu.
Everything tasted good but the Tater stole the Show.

I do stuffed tatters with kumara ( sweet potato) here as well, I havnt done one in a while. Your pic tells me I've got to do it during the week.

Hmmm??? Pardnah, so you're twice baking a Sweet Tater ? If so, then what do you stuff them with ? Here in the Lone Star we only use butter, brown sugar and marshmellows on them - - - ?or? that's all I've ever put on one :dont:

I prick a potato and rub with oil, microwave til its tender, scoop tatter out , peel approx amount kumara ( sweet potato) then mash with butter til it's creamy, add bacon,spring onions, bit of cream and I add creamed corn, fill potato,skin and reheat in the oven or the q. Bit of cheese on top,as well.
