Marinara/Provolone/Cooper Bread Bites

Marinara/Provolone/Cooper Bread Bites
So it's been a really really long time since I've done this on the Lump.
Grabbed a big ole Italian Bread and scored it both ways about 90% thru. Drizzled some Olive Oil, packed with Provolone and Cooper Cheese. Grabbed the Best looking jar of Marinara I could find and mixed it with some Melted Butter, Garlic Powder, Onion Powder, Minced Garlic, And some Fresh Parsley then forced it between the 1" pieces like a golf ball in a garden hose.
Grilled covered in foil at 300 for 25 minutes, then uncovered and added more Marinara and some shredded Mozzarella on top and let cook another 15 minutes at 500.
It's some good stuff for sure :)

But what is Cooper cheese? what type of cheese? I'm thinking it's a brand name.

OK. Thanks. I see that it's in my area also, and so it's essentially a style of Cheddar cheese. I have experimented with a number of cheese in my life, and I didn't know how 'exotic' it was. Thanks. I'll have to try it.
