Well I tried all that touchy feely stuff and I tend to either get em raw or over cooked. Guess my touchy feeler is outta whack.

I use a Thermapen when cooking almost everything....I use time as a base but temp determines when things are done. The Thermapen isn't cheap but it is the best and fastest instant read thermometer available.

Seems like I had a wifey type person who got a bit riled up over that jap peppa deal. Swear I've had so many I can't hardly remember who was nagging on that particular deal. Lot of demand for us manly type testosterone ladeen men out in the co-moonity ya know? That can be the difference in a pay check etc. Got to make every shot count ya know? They always call uncle bigwheel Mr. Bullseye. May have had something to do with the bbq sauce. I aint quite sure.
