Had some friends over today so o fired up the smoker and we hit the pool.

Brisket with Sucklebusters 1836 rub - that bark was something else.

Pulled pork with Meat Church Honey Hog and Honey Hog Hot.

Pig shots (show stealer today) - Holmes Sausage wrapped in bacon. Stuffed with Cream Cheese, green chili then topped with cheese and Honey Hog Hot. You gotta do these!

Thanks Bill. Basically you use all the stuff mentioned above and make a bowl by wrapping the bacon around the sausage. I smoked them for a little over an hour but the bacon wasn’t quite where I wanted so I put them on the Weber since I had some coals left from the corn we grilled.

My kid actually came back down around 9 last night asking if we had anymore (they were long gone). She never does that.
