Just guessing, I'd say it's similar to the 3-2-1 process for pellet poopers. Except the initial unwrapped cook is either skipped or short. Then wrap, liquid and cook, unwrap and reverse sear.

Guessing done, I'm very curious here too. Be nice to have the option to get ribs done quicker for situations like surprise guests, etc... Gotta admit, they look real good in the pics too. :tup: :cheers: :chef:

on a 22" Weber they wrap the ribs in foil and directly over the coals bones side down for 1 hour
then unwrap and finish bone side down until finished
from what it said, about 2 hours total

Weber speed ribs - experimental cook
I get emails from Weber, but I cook on an OldSmokey
a recipe I got a couple of weeks ago had a recipe for speed ribs
you start out by wrapping the ribs in foil and putting them on the grill
then after an hour you take them out of the foil and do a reverse sear
and the experimental cook on my OldSmokey begins
I removed the membrane off the bone side then I mixed my seasoning- the Costco discount version of Mrs.Dash (no salt) with CYM and painted it on wrapped them up and away we go
i've already decided i'm going to leave them wrapped for 90'mins instead of 60'mins before I do the reverse sear
a full chimney of charcoal in my big oval foil pan
and of course it started to rain just as I was starting the cook so I had to deploy the OS's umbrella

at the finish...
my adjustment to 90'mins in the foil wrap was too much
they were too steamed-soft on top and over done- crispy on the bottom
I should have stuck to the 60'mins in the foil wrap that Weber recommended in the recipe
they finished great on the grill coming out of the foil
they were more than fall of the bone, but crunchy on the bottom
they could have finished in 90'mins total
they were still VERY tasty
