Daytona Chuck and Saturday Butt

Postby bsooner75 » Sat Feb 17, 2018 10:25 am

Going to a 500 party tomorrow and taking pulled chuck for tacos. Yes the Sooner green sauce will accompany it. Since I was firing up might as well chunk a butt on for dinner tonight.

Woke up to rain rolling through this AM so getting a little bit of a late start.

I've never smoked a chuck roast before.
I picked up a 4 lb chuck roast yesterday for a pot roast cook either tomorrow or Monday.
I may have to change my plans for that hunk of cow.
Looking forward to your outcome and technic Sooner.

BTW
My son and DIL are vacationing in Florida. They went to the truck race last night.

Hey Bill. I’m going to take it to about 165 or whenever the bark looks right then foil it until it falls apart. No hurry since we aren’t eating it until tomorrow. Considered a pan w/ some beer and onions but I don’t want a pot roast texture for tacos.

Malcolm Reed on how to bbq right website has a good method for smoked chuck (roast style)

One of these days I want to make Daytona, Talladega and Bristol. All I’ve ever seen live is TMS and the racing there is meh most of the time. Bet the has a blast last night.

My Pals in Baton Rouge go to Tally every year with their vintage motor home and have a ball.

Daytona is on my list as well. I go to talladega every year in the fall, and usually to one of both of the TMS races. I am thinking about having a little fish fry for the race tomorrow. I have been hoarding some Alaskan cod from HEB in the freezer for awhile now. Think tomorrow may be the day. Since I just took the pit down to the cookoff I won't have to look after it for cooking for the race tomorrow.

Butts coming along. Hope I didn’t wait too late in the day to start. Got it up on the top shelf for max heat now.

Forget what I said about the beer…decided I wanted the chuck as tender and moist as possible since it will be reheated tomorrow. So in the pan w/ a Tupps Poblano Pale ale they go!ImageImageImage

Yup. Between the weather and adding the butt this was a definite cook for Blue.

Chuck roasts are done. Probed like butter and smells like heaven. I’ll pull the meat later.
