OK by Freaky I mean that
1. I don't normally make or even eat Tater Salad but I did today
2. The Wiffy rarely cooks anything anymore and she wanted to do the Pot of Pintos
3. I boiled my Country Style Ribs  OK OK OK - I didn't actually boil them I "BRAISED" them and then seared over hot coals

Kingsford got double duty today
IMG_0001.JPG

Tater Salad was made with Mrs. Renfro's Hot Chow Chow, chopped green own-yawns, Mayo, Honey Mustard and red Taters skin-on- - the Wiffy liked it  :rose:

Wiffy's Pintos have everything but the kitchen sink in them and they would have been just fine by themselves for Lunch

Three beautiful bone-in beauties spent the night with Suckle Busters 1836 Rub - - -
IMG_0002.JPG

The ribs got into the Sauna with Suckle Busters Hot and Spicy Sauce and some Beer

IMG_0007.JPG

After rendering a while they put on just a tiny bit of bark

Lathered with the Sauce and plated

IMHO Country Style/Farmers Cut/Jacks Ribs/Chops are all good but I really prefer the ones with the bone-in if they have sufficient meat around them. Even better is, when I'm knawing the tender meat off of the bone, I think of my Dad and how he used to say "Son, there ain't nuttin better than Polishing dem bonz" and believe me he could polish with the best. :salut:

Those look great. The boneless ribs be get here are so lean. Its hard to cook them without drying them out.

Whatta plate! Beans, tater salad, all look gooood. That 'rib-braising' is how we do St. Louis pork steaks. Everyone loves them.

Thanks Y'all :salut:

Wild Bill, I really liked the way the heavy cracked pepper went with the sweetness of the reebz

Justin, these were lean also and had I not been braising them I would have had to really baby sit them with spritzing

Sailor, I actually stole this technique from The BBQ Pit Boys Website and I've only done it a couple of times in the past for some reason :dont:

Sooner, I was just trying to take some of the pressure off of my Newzie Pardnah because I'm such a good guy yanno?

Outlaw, YES, I had two and she had one because I finished my first one faster and first come first serve is the Lone Star way :texas:

Thanks, C.S. do Y'all do those in the North Country :?:

Talking of chewing on bones, my wife can polish bones with the best of them. I prefer knife n fork.

Dad always said "the closer to the bone the sweeter the meat" - - oddly enuff he did not BBQ or really cook anything - - just not his bag I guess :dont:
