Todays Tri Tip

Finally a break from these sub artic temps.....fired up the BGE and threw on a nice big Tri Tip.
Brushed with some nice evoo and a heavy coat of Beef Brigade rub....
Grilled this direct until the thickest part had an internal temp of 135 degrees...out for a 10 minute rest then sliced.
Served with some bite sized cheese and potato perogie's and some home made slaw.
