Looks like it came out just like you liked. Advise is a good thing, but most people who ask for it already have their plan in mind and just looking for enforcement. I haven't seen anything you can't cook my friend (I am going to get you over your brisket hump one day)
Do you feel like the cut was worth the money? I never cook Veal but for that money you could almost buy Wagyu or Kobe. Just curious.

thanks, Neighbor to the North that is a legit question and I did some soul searching yesterday and decided that NO I WOULD NOT buy Veal again, unless it was possibly a Sale Item but, even then, it's doubtful - - - - altho the taste was Super, it was not in anyway the same as a filet or t-bone or ribeye which I dearly love the taste of

This is why I don't buy veal. We raised cattle in my youth and I knew a couple ranchers who raised veal for their families. The conditions they kept the calves in was tragic, the calves always looked sickly with watering eyes etc. I'm not a Peta guy by any means, but I recognize abuse when I see it. I know chickens are even worse and it doesn't bother me. Conflicted?? For sure.
