The Pepper Jelly is a MUST for me now and I should have used more this time. My favorite filling is cream chez and pepper jelly only but I didn't have cream chez so opted for pepper jack and browned pork sausage with the pepper jelly. They were still good but I sure like the creamy sweet hot inside them much better. The only thing about the cream chez and pepper jelly is that it really drips out when turning on the grill grate and I haven't figgered out another binding agent to add ?yet?

It's a pain, but some of ours we cut open like a clam shell, leave the stem on, reach inside and clean them out. Then fill with whatever, wrap with bacon, toothpick to hold together (I still need me some of those Willie Pins) and they are easy to put on the grill, turn and not lose any filling. Only do those in small batches though. Too time consuming for bigger batches.

Yes and Yes - - - easy to put on grill and easy to turn without loosing filling HOWEVER, I have learned that getting a good coverage with some overlap on your bacon wrap helps hold the filling in the bestest - - - IMHO, Willie Pins are miles above a wooden toothpick AND they are two pronged which holds even better. I NEVER USE TOOTHPICKS ANYMORE. One thing I do is to soak and clean them about every second grill, especially the coiled area which tends to gather and hold stuff a lot more than the long thin prongs do. A for this old rheumatic phart.
