Hey Ya'll... Just looking for your thoughts on my last brisket cook. I trimmed the fat off, cooked it down, then injected the flat with that fat. The full video of the whole cook is listed below:

It's a technique similar to larding except you're pre-rendering the fat where larding involves injecting the fat itself into the meat. I've never attempted this method as it seems too labor intensive. I like the idea of rendering it then injecting, but then you're dealing with the morality of using fat over anything else a bit easier on the ol' cardiovascular system.
