Meatball experiment

Saw on twitter a while back where Alton Brown was cooking meatballs in egg cartons. The concept behind it was the egg carton wicks away the grease and creates a crispy meatball all the way around.

I will admit, I read the basic concept, looked at the picture and went for it. I think if I cooked at a higher temp (in my smoker I would’ve just had to move to the top shelf…) it would really work well. Turned out pretty good anyway. I was at the end of a brisket cook and the meatballs were a late addition.

Sampled a couple last night and vac sealed the rear for spaghetti down the road.

That Alton is a nut indeed, that's why I like watching him. Not only is he a fantastic cook, but he explains the ( why ) and gives history of the why's as well. Imho, he's an extremely smart guy and a great cook !

I LOVE out of the box stuff like this :)

Did it not pick up a "paper" taste at all? Seems like it couldn't help doing so. :dont: :dont:

Russ - nothing special. My wife just threw together her normal meatballs.

Outlaw - I didn’t notice any off taste but I will admit I started the kickoff to the college football day with a rather large rum & coke and then followed up with multiple cervezas…

Hmmmm - good question OUP. Might be a little tough to get the moinks down to the size needed for the carton. Also, I typically put moinks on a grate and just let them drip. Most meatballs (not that I am an expert) are in a pan and swim in the grease.
