Re: Rack of Lamb Pops
I keep seeing those in the meat case with the good stuff at HEB but haven't gotten the nerve to try some. I had "Mutton" one time way back and did not like it but THOSE look sooooo Good

Re: Rack of Lamb Pops
Oup, mutton is an aquired taste, a bit gamey kind of, where lamb is just amazing. Mutton is fairly old sheep, normally fed to sheep dogs etc, it used to be sold everywhere but I couldn't tell you the last time I saw it being sold. We always have lots of lamb in the freezer.
Capt has done an amazing job on his cook. He has it mastered. We had tandoori lamb cutlets here 3 days ago and also had a lamb curry. There was none left over, lol.

Re: Rack of Lamb Pops
OUP
the other day, when they had the special at Aldi I picked up two racks
the pics - cook were from the first rack
the 2nd rack is in the fridge defrosting
from now on i will ALWAYS cut them into two rib portions to marinate / cook
then cut them in half to serve
it was by far the best technique i have ever used
