Reverse seared N.Y. strip

So I drive to the store to load up on some T-bones that went on sale for 4.95/lb and ran across these beauties also on sale..
These strips are MONSTERS!! I will be doing my first reverse sear (on purpose) this evening. Teaser photos now!

I went with the ol' K.I.S.S. method of coarse salt n' pepper..

The plan is to put it on the masterbuilt at 250 for about 35 minutes then over to the OK Joe on some lump and mesquite for 3 minutes or so per side. Certainly more to follow!

i just picked up some nice thick strips for $3.99# Image

picked up on the cookin' shows
if you're going to high heat sear your steak
just salt it before the sear
pepper it after you take it off
the sear temp will give you a burnt pepper flavor

Nice tip right there on the s and p, I'm gunna try that way.

A bit late on the after pics but, better late than never. Lol! As planned, put it in the masterbuilt for 35 minutes with some mesquite chips to start it off. Then got the fire going in the Joe. I was out of lump though, I went with a chimney of kingsford instead, also loaded with mesquite chips! Let it rock and roll for a minute and a half each side.

After 15-ish minute rest.

And sliced and plated up with some tater salad. This was a really good idea for dinner!

Fantastic. My grocery store occasionally runs sales on NY strips as well, and I don't miss the opportunity to enjoy. If you are feeling lazy, I have been doing my reverse-sears via the oven and a cast-iron skillet with some great results as well...
