Been trying to get time for the flat top lately and today is a day off, so I decided to make a very very ( small ) Omelette. Went with a dozen eggs, 1/2 cup of Whole Milk, Bacon, Italian Sausage, Ham, Provolone, Cooper, White American and Shredded Part Skim Mozz...
We gave the little dude his little piece, both had our fair share and the rest is for breakfast tomorrow morning. The leftovers barely fit in a 9×9 take home containers...
Good stuff, now where is my pillow ?!?!?!

And just what army are you planning to feed with that monster?? I want some, please??

I have yet to attempt an omelette. Need to get on that.

Only tip I might be able to offer you is to get all 4 burners up to temp on medium. Then right before you pour the eggs in, turn EVERY burner to low.

I've made the mistake in the past leaving them on medium low, but as you know that thing cooks extremely fast and it's so insulated it holds the heat too well sometimes.

Other than that, you pretty much have yours mastered ..
