Spatchcocked Cornish Hens

Postby bowhnter » Mon Jan 07, 2008 8:04 am

I took some Cornish Game Hens and split them for the grill.

Took some Rosemary, Thyme, Garlic, Shallot, Chives and mixed in butter for under the skin and rubbed on top as well. Then used Montreal Chicken Seasoning.

Here is a plated picture, and you can use This link if you would like to see all the pics

The cutting board is what I won from TVWBB Christmas Drawing, and the sausages (Brat and Italian) Papa Tom and I made on Saturday.

Mike, really nice. I enjoyed the photo tour. The hens look mighty eatable, Now that we all know what they are called. I know they was good. CF
