Was supposed to do this on Sunday but kinda got caught up in other stuff so I did it yesterday. They called it a crown roast at the meat market but I always thought those made a circle. Irregardless, it came out tasty and delicious!!

Ran it at 275 for about to 2 hours. Pulled at 140 degrees internal and it crept up to 148 during the rest.

So is that beef, it looks like lamb crown to me. I've done lamb like this with a stuffing in the middle.

It is pork but I thought it looked like lamb too. Trying to get brave enough to cook some lamb at some point in life.
