chilibbq wrote:Well guys & gals, the rib roast came out very good, wasn't to worried about it. But I have to say the cornish game hens were great, might not do chicken at the house anymore. cooked 4 of 'em, Split them, then a 2hr brine in a 1/2 gal water, heaping 1/2 cup of kosher salt(Diamond), with 1/2 cup of fresh cracked black pepper, 1/4 cup white sugar, 3 Tbls of Dizzy Dust. Cooked hot (350 Give or take 10 degrees) with Cherry wood and kingsford. When they went on the grill sprinkled with kosher salt and cracked black pepper that's all. was alittle worried about salt but they came out great. wife is not a salt lover and she said I did good, she ate 2 last night. wish my 1/2 chicken came out this good in cookoffs

sounds great Chilibbq. Cornish game hens are good, too bad most people don't do enough of em :)
