HEB "Prime One" prime rib

Seared on the Small BGE, roasted on the XL BGE until 125, then rested under a foil tent for 15 minutes. Temp climbed to 129 during rest.

Your description almost exactly mirrors what we did for Christmas dinner yesterday, ours went on to 133°F while resting it was super.
