Smoked Cheese

Just tried my hand @ smoking some cheese. I smoked it in my stick burner for 2 hrs @ 80 - 90 degrees. Also put some fresh cracked pepper on it ! Waiting to cool & will vac seal & let bloom for a couple week's . :cheers: :texas:

I have never smoked cheese, no reason really. I do love eating it though. Yours looks really good. CF :D

Yea I love me some cheese but this is my first attempt at smoking it. A co-worker smokes it often & said fresh cracked pepper was great on smoked cheese. I love pepper on everything so I thought I would try it on the cheese. I will report back in a couple of weeks after it has aged some . :cheers: :cheers: :texas:

Looks great! The bloom time is IMPERATIVE!! I think some cheeses require longer periods than others, though I'm not positive on that :dont:

Several have said it taste like a dirty ashtray smells if you eat it right off the pit. I'm gonna wait 2 weeks before I try it , if it's not good I will go another week . :scratch: :texas:

Getting ready to crack open a block of ColbyJack that I smoked last week. It was plumb nasty smelling right off the pit. Hoping that's a good sign. Will sample and re-seal if it's not quite there.

Hey Bladerunner, the cheese turned out great !! Just took another batch off last weekend. The smoke mellowed out quite a bit in 2 weeks , but still had a smoky flavor ! :santa: :texas:

Sampled mine after a week.... much better than I expected but I feel it could use a little more. Re-sealed the remaining block for New Years. Will be trying this again if temperatures ever get cold again.

I smoked some muenster cheese last weekend & tried it today, never had it before & it was really good just after 11 days. It has a soft texture & is really mild , great with the smoke on it !! It melts easily & would be great for mac & cheese . :cheers: :texas:
