I just followed Larry's instructions. Indirect heat until center of meat is 100 degrees. Then grill until center of meat is 125 degrees. Then rest for 25 minutes.. Worked out perfect. Tastes and looks much better than the traditional method I use to grill steaks. Hats off to Finney & Larry.. thank yall for sharing that technique... :D

that's why I made it too. I had to see it for myself. Now I am completely convinced it's a good method to grill/bbq meat... :D

I guess a guy could finish them off on the gasser they'd still have the smoke flavor from the indirect..

Looks good, Sapo! Usually I cook steaks by searing, then cookin' indirect. I'll have to try this way next time. I'm a little surprised your therm probe survived bein' that close to the fire, though.

PS, cool version of Tennessee Stud in the video. You need to start givin' credit to the bands in your vids. :wink:

What temp was your K7 when you started?

I had it at around 285 - 300 degrees at the dome. I think you can do this in the oven and then take it out and sear it on your grill at the end. It was one good steak.
