Loin backs on the WSM

Postby Puff » Sun Jan 28, 2007 8:03 pm

Did 3 racks of loin backs on the WSM today.
Used KF and hickory. Had a bit of a weather change halfway through the cook. North wind kicked up and a mini blizzard took over for about a half hour. Had temp control problems but she finally crept back up to 260* (dome temp)and stayed for the duration of the cook.

From the left rubs are...
Harley's Texas style sweet rib rub, Wolfe Rub Original, and a little something I'm working on

One 4' by 4' ft. hunk of green board blocking the North wind and I was good to go  I'd still like to fashion a more permanent wind block 8)
