Cooked my first meatloaf on the Weber.
Gator, I am not going to ever get a cookbook done like I want if I keep forgetting to take in-process pics.
Used 2 lbs of butcher ground chuck, 1 lb Jimmy Dean hot sausage, 2 eggs, 3/4 - 1 cup whole wheat club crackers, 1/2 tsp ground mustard, 1/3 cup wooster, 1 small onion, 1/2 green pepper and 2 sweet peppers, 1 clove garlic, salt and pepper.
I put some Feta cheese in the middle.
Cooked on the Performer indirect @ average 350* with a small chunk of apple wood for 1.5 hrs until 165 internal. Used parchment paper over a drip pan, then removed from paper the last 30 mins. (Use a BIG spatula) and the paper will be holding all kinds of hot juice so be careful.
The last 30 mins or so, hit the top with some Head Country sauce 3 times.
