Had some friends over for the AFC & NFC championship games.
Cooked up a tri tip on the kettle with Sucklebusters Espresso rub. I intentionally over cooked it to medium so everybody would eat it. I like it much better at medium rare but the seasoning was excellent.
The sausage was Earl Campbell’s smoked sausage. First try for this one and it was really good.

Looks great, Sooner. That looks like the perfect doneness to keep the well done crowd happy without really overcooking it.
Confession - I have never cooked a tri-tip.
I might have to seek one out this weekend. I'm a bachelor this weekend and the Q Shack is singing its Siren song.

Thanks Piney - I highly recommend going closer to medium rare. I’ve cooked one before and it had a much beefier flavor. But everybody seemed happy.
I smoked it to about 140 then stocked the fire and seared it.

Yeah, I'll definitely shoot for the more rare side of medium rare.
I cook to my table. You nailed the middle ground to please all, and I don't think that was easy to do. Well done!
