Dry aging my meat
Well I did it. I’m starting the homemade process. I’m using my strip for this one. Himalayan salt in a 1/2 sheet pan with a cookie sheet in between. Set the refrigerator to the 34-38 range depending on these winds storms we have had over the past 60 hrs. I hoping we don’t lose power again to not screw this up. Going for a 21 day dry.

I have heard and read several interesting articles about aged beef, never eaten any or been around the process, but I like what I have read and heard, I hope yours comes out as good as what I have read about.

Update... I checked the temp and it seems it was colder than I thought as the internal meat temp was 31 so I raised the temp and I’m at 34 now.

I took a look at it a few moments ago. It has really shrunk and very little mold found. I cut into it Friday. It all goes well, I’ll buy a dedicated beverage refrigerator for it and other aged meats.
