So many delicious things being posted here, which get you motivated. I made a Porchetta today. Bought a pork belly which I cut like a book. Spread on some mustard, salt and pepper. Then put on the fill, which end up as a kind if stuffing. It consists of parsille leaves, shredded orange peel?, lots of garlic, onion and pesto.
Roll the pork belly tight and tie it up. Thread it on the skewer and on the grill for a couple of hours. Served with portwine sauce and fresh salad.
Tasted good.

I use it more often than I thought. I haven't had it for so long, so I am not very experienced with it. I regularly use it for chicken. Porchetta will be made regularly. I have also used it for Schweinshaxe which I have posted in this forum.
That said I am also looking for other dishes that are suitable for the rotisserie.

Thanks for all nice comments.
This was my second attempt on a Porchetta. I recommend trying this, but you need a rotisserie. Very easy and tasteful. Once on the skewer it pretty much makes itself.
I think you can stuff it with whatever you like.
