Pork Crown Roast (1st Attempt)

Tried my hand at a pork crown roast for Christmas Eve.  I've been reading up on it for quite some time and decided to go ahead and jump in with both feet.  I was able to get the rib roasts from one of our local grocery stores that was already frenched, so all I had to do was make a few slices, bend the roasts and tie them together.  I seasoned them with some Alpha Rub and let it set in the fridge for a few hours.  Fired up the Pit Boss Ceramic, with some Royal Oak lump, let it settle in around 275 and added three chunks of apple wood.  It was really windy that afternoon, but the pit had no issues holding a steady temp. Once the smoke turned blue, I put the roast on.  When the IT hit 130, I glazed it with some SBR that had a healthy dose of honey and a little apple juice to help thin it out.  Took it off the pit when IT hit 141 and took it in the house for a short rest.  It was really good!  Everyone raved about how nice and sweet it was and how juicy it was too.  This will definitely be going down again in the future.
