Friend of mine just stopped by with a couple of pieces of venison. One is a bone-in roast about 2.5 lbs, the only is hunk of boneless to cut steaks off of. Its about the same weight. Both were frozen, and are resting in the big freezer downstairs till I can figure out what to do with them. :D

I'm toying with the idea of grinding some of it up with some pork/beef fat, slightly browning it ever so lightly and then using it in the stuffing (instead of pork sausage) for the pheasants that I got to get done this month. Bet I can find some local dried wild sage from the new agers in the area 8) to put in the stuffing. Maybe make my own croutons from some light bread? Just thinking outloud.
