Since all my local sources for casings only have hog gut, and I want to make Cotto Salami I pose this question:
Would muslin casings with stand 4 to 5 hours of smoke at less than 200*? If so, I put the Mrs to work with that expensive Viking sewing machine I bought her years ago that could be used more often that it is.

Fella I used to chat with some over on Rick Thead's old bbq list who goes by the name of Dan Gill..posted quite a bit about making some kinda dried sausage using muslin bags. Tried to google him up on that topic but couldnt find much info other than a few of his recipes (not sausage). It was some kinda technique that got passed down from his grandpa etc. They had real deep roots in old Virginny and he even had a turn of the century walk in type smokehouse on his property. Will dittos whut them others say...it should work just fine. Tell her to get unbleached muslin. Think that was one of the keys perhaps.

Got a yard of unbleached muslin for 1.99. Figure I can get at least 8 casings out of that minimum. 25 cents a casing beats the $1.00 plus shipping for the fancy casings offered on line.
PS: The Mrs spent $78 on other stuff at the same store

Whattya mean .25 per? Heck peel them off throw 'em in the washing invention and they good to go again.......
Old worn muslin sheets will never be looked at the same again.......
