Tips for making jerky?

I have a friend who want to make jerky on his smoker - any tips from the pros? :?:

Gator, I'm far from Pro but I've done Jerky on my ECB and my Dehydrator - - - the only thing I do is take a large piece of meat that has very little marble in it such as London Broil or Venison (if you're lucky) I cut my jerky cross grain so it's easy to devour, marinate it is Allegro Hot and Spicy and then pour on the Cayenne/Coarse ground black pepper or whatever spices you like - - then on the grill for how ever long it takes to dry it out LO and SLO - - I've used a water pan but not all the time- - - kinda depends on the amount I'm trying to dry cook. Like I said this is Novice Jerky 101 but my G-babies love it.
