Kabobs

Indian Style Kabobs
1 lemon cut in half
1# ground Lamb (use beef if you want)
Add the juice of 1/2 of the lemon to the meat, mix and set aside.

4 flat wooded skewers soaked in water

In a bowl combine the juice of the other lemon half with:
1 TBSP EVOO (I used Grape Seed Oil).
1 inch of Fresh Ginger root finely shredded
4 cloves of Garlic finely minced
4 green chiles finely chopped
1/2 tsp fresh ground black pepper
1/2 tsp Tumeric
1 tsp Salt
1/2 tsp ground Coriander
1 tsp Cumin
1/2 tsp Garum Marsala

Mix well and add to meat. Divide mixture into 4 equal parts. Mold each parts around skewer. Grill and serve with rice, riata and flat bread. Note, these are easy to over cook, think hamburger on a stick.

For Greek Style Kabobs omit the Garum Marsala, chile and ginger and add 1/2 TBSP dried mint 2 TBSP finely minced onion.
Below 4 Kabobs. 1 Lamb, one Beef, two 50/50 Lamb-Beef

I was just reading up on how to make fresh Garum Masala in the spice book I bought. LOL.

When I was stationed in Korea, there was an awesome kabob stand down range that we went to after a late night out.

Can't beat the taste on a fresh roll.

A blend of spices, typically cumin, tumeric, coriander, cardamom, cinnamon, cloves and nutmeg. You can find it at an ethnic market or google it and there are hundreds of recipees.
