Found this recipe in a mag this mornin . Thought someone might like it .
2 ounces crumbled blue cheese
5 slices crisp cooked bacon , diced
1/4 cup light cream or half-n-half , plus more for thinning
Freshly grnd black pepper
salt
1 pnd ground Bison meat
2 or 4 onion rolls , halved
2 0r 4 thick slices red onion lightly oiled
In a mixing bowl , combine blue cheese , bacon , and cream , blend mixture leaving some chunks , Thin mixture to desired consistency with additional cream , salt n pepper to taste .
Shape grnd Bison into four 1/4 lb burgers , Grill on charcoal grill directly over coals for about 8 - 10 mins flipping occasionally . Allow burgers to stand for 5 mins before serving .
Grill onion slicesfor about 6 - 8 minsor until tender with grill marks . Place rolls on grill , cut side down , for approx. 1 - 2 mins .
To assemble burgers , place burger on bottom half of onion roll , top with some of the blue cheese sauce and grilled onion and top with top half of onion roll .
