Yep, I remember my first time :wink:
I went to Sam's Club to pick up a three pack of loin backs and a brisket to smoke for an office party and they where all out of back ribs so I went with the spares. I cut them St. Louis style and they turned out awesome. I haven't went back since. :D

Slicing spares for that presentation box can be a challenge for sure! We trim them to St. Louis style by removing the brisket bone... basically just find the knuckle of cartiladge on the bottom of the bones and trim across at that point.

You'd be more than welcome to come hang out next time we are cooking at the house or where ever and watch what we do.

That was a great video. There were several others there to. I also found one on trimming a brisket.

So answer me this:
with a full rack of spare ribs you can make a StLouis cut, and are the baby backs also fron the spare? I always thought that the baby backs came from the ribs up towards the back bone.
