Question about the apple rub I ordered

Postby Delaware Smoker » Fri Apr 06, 2007 8:58 am

I ordered the apple & maple rub, last week.Got it in the mail yesterday.I tasted both on my finger. The maple is very good. The apple is good, but seems to be spicy.Do you guys cut back a little, when using the apple rub?I like my ribs spicy, but we all know how some folks are.Any input will be appreciated.

I'm sure DDog will chime in but I've noticed that with any heat in the rubs will slightly "burn off" during the cook. Depending on how much rub you use as well. If you coat the ribs with a lot of rub, chances are they will be as hot when you did the finger test but will have some lingering heat to them after the cook.
I use a similar type rub that has some heat on the finger taste but dissipates throughout the cook. You're just gonna have to apply your desired amount and give it a go. See what kind of heat you like. A good test would be with a chicken breast.

I agree with SC. Usually the heat will be less after a long cook. Flavor will be a little milder than with finger test. :D
