Arm Shoulder Picnic

Best of intentions. Started Einstein an hour ago, fire went out? Must have damp lump. Reloaded the chimney and restarted. Looks like things will be a go now.

Using a grease pan (grate and pan from an ECB) to attempt to keep the smoke at a manageable level since we now live in townhouseville.

Picnic weighs 7.67 lbs. Using my rib rub on it.

Picnic went on at 9:30 skin side up. I flipped it over at 12:30 where it will remain until it comes off.

Einstein settled in at 245 which is ok by me. Funny on elevation changes effects the vent settings. Top vent runs more open and lower vent a touch more on the closed side to get a steady burn. Practice makes perfect. :lol:

Thanks! I'm cooking mine at 275-300*, cause I have to have it done for dinner tonight. Right now it's at 185*, 5 1/2 hrs into the cook.

Dats, the times I have moved, I have always misplaced something :oops: Usually don't notice it's misplaced til I go looking for something later on. Then I do the mad tear apart of everything to find it. :roll: This always gives the wife a good laugh :scratch:

Well bet that picnic will treat you right. Its my most favorite hawg part other than the mountain oysters and the ovarary/salivary glands. Now dont even get me started on snouts and pickled pig's feet. Wowser. Sure wished I had a pig in my parlor today. You a very fortunant young man.
