How do you serve your ribs?

Postby OSD » Fri Mar 30, 2007 6:12 am

Since ribs are one of the most popular meats to BBQ.
How do you like your ribs? Do you like your ribs served Wet-with sauce or Dry-just cooked with a rub. I like mine dry with sauce on the side.

Tell us how you like your ribs and why.

So far, I have only served dry with sauce on the side. I should add that I just became able to make ribs that are halfway good.

I am planning to try some wet soon, but since we all like the rub I have been using, everyone asks for them dry, and they will use sauce if they want.

I actually prefer mine wet. I don't drown them in sauce, just a light coating the last 1/2 hour they are in the smoker.

Generally I serve 'em dry w/ dipping sauce. I had great luck recently with searing a lime brown sugar sauce into a few racks recently. Didn't sauce 'em heavy, just enough to have a light coating before throwin' 'em over direct heat for a few minutes.

Personally, I figure if you're confident enough to serve 'em dry, they're good. Besides, I usually have a couple of sauces, so dry ribs make it easier for folks to use what they want.

I voted dry with rub cause that's how I eat em. Now if we got company, sauce goes on the side. 8)

I started serving my ribs with sauce on the side.People look at me strange.Funny, hardly see sauce being put on the ribs.So they must taste good without it.

If I'm trying a new rub most of the time I'll leave them dry with sauce on the side unless I plan on using sauce with the new rub.
If I'm not experimenting, lightly sauced, and I get heavily sauced :D

When I take the ribs off of the pit, I give'em a slight glaze (ala Danny G.), wrap in in foil or plastic wrap and then they go into the hot box for a bit to rest. Sauce is available, but rarely used.

James.
